A Salad Of Bitter Greens

This is my favorite winter salad - and one of my favorite salads in general. It's a lovely salad with the pale, greenly white endive, the red-and-white radicchio and the dark green arugula. I often omit the arugula so that the salad is very crunchy and robust. The greens are all crunchy and bitter and sour with a very refreshing effect. The lettuces here are all considered "tonic" - in other words, they have various things in them that will restore you to good health. I'm certain of it.

3-5 heads Belgian endive
1 head radicchio
several handfuls baby arugula, to taste

Make sure the tube-shaped endives are pale, firm and without rotting edges. You can peel off the outer leaves if a few are bruised. Pat dry and slice into 1-2 inch rings. Scatter into a bowl.

Rinse and dry the radicchio. Slice into small wedges and add to the bowl.

Rinse and dry the arugula, etc.

You may top with crumbled Gorgonzola or your favorite blue cheese if you are feeling decadent. Use the mustardy House dressing for this.

If you want an even more tonic effect, add slices of navel oranges and use a lemony dressing.
