Amanda's Meatballs


For Meatballs:
1 1/4 lb. ground beef (90 % lean)
5 cloves garlic, minced
1 1/4 cup Progresso Italian bread crumbs
3/4 cups grated Italian cheese (I prefer a mixture of parm. and romano)
1/2 cup finely chopped parsley
2 eggs
1/8-1/4 cup warm water
salt and pepper

For Sauce:
2 Large Cans Hunts Tomatoes Sauce
1 Large onion, diced


Mix all meatball ingredients in large bowl, incorporating evenly but being careful not to overwork. Form into meatballs (about 14 large or 30 small). In large skillet, add 2 tbsp. olive oil and brown meatballs in two batches. Remove from heat. In same pan, add diced onion and sautee until translucent, about 10 minutes (add more oil if necessary). Add the meatballs and the sauce and simmer, stirring occasionally, for at least 1 hour and up to 3.
