Buttermilk Waffles

Oh, I have won crowds with this recipe. If you have houseguests, serve this in the morning with oven-baked bacon and fresh fruit and coffee & tea. The guests will try to pay board.

I include only the recipe for the batter, since you'll have to cook them according to the vagaries of your waffle iron. I have a Belgian waffle iron, so it makes fewer, larger waffles. I often wish I had a regular waffle maker, too - which is insane decadence.

Whisk in a large bowl:

1 3/4 cups all-purpose flour
1 tbs baking powder
1 tbs sugar
1/2 tsp salt
1/4 tsp baking soda

Thoroughly whisk in a smaller bowl:

3 eggs
1 stick butter, melted and slightly cooled
1 1/2 cups buttermilk

Make a well in the dry ingredients and pour in the wet ingredients. Combine with a minimum of strokes (use a fork or whisk). There will be a few lumps. Ignore them!

Make waffles according to your iron's instructions.
