Chinese Cucumber Salad

I'm not usually a fan of cucumbers. Whether they are in sandwiches or salads, I will ferociously remove them. As far as I'm concerned, they are just tasteless blobs of water. However, cucumbers are completely transformed in this salad. You won't even recognize them!

The secret here is to salt the cucumbers overnight and remove any remaining water with a cheesecloth. This step absolutely cannot be skipped!!

Ingredients

  • 2-3 cucumbers
  • two cloves of garlic, minced
  • good-quality sesame oil
  • rice vinegar
  • sugar
  • salt
  • hot pepper (optional)

Directions
Peel the cucumbers and remove the ends. Slice each cucumber in half down the middle. Scrape out all the seeds with a spoon or coring knife. Cut thin slices.

Put the cucumber slices into a container and salt heavily. Mix in the garlic. Store overnight in the refrigerator.

In small batches, squeeze the remaining water out of the cucumbers using a cheesecloth.

As promised, the cucumbers are totally transformed! Now they are crunchy nuggets of delight.

Next, flavor your cucumber salad to taste. You will probably need to add more of each ingredient than you think. Keep going until you can't stop eating the salad. Ultimately, this salad should be only slightly sour with a strong aroma of sesame. It should be noticeably sweet and salty.

The finished product! The only way cucumbers should ever be eaten. After you eat this, you'll probably want to avoid human contact for a little while! (garlic)
