I made "Sicilian Tuna" Friday night from "The Italian Cookbook" by Fiona Biggs. By the way excellent cookbook. I Grilled thick slices of fennel bulbs (Anise) and thick slices of red onion and placed the marinated grilled tuna on top. It was a great combination. Thought you might want to try roasting fennel and onion to add to your recipe. I like the sweetness of the onion and the licorice flavor of the fennel. For freshness you could add some squeezed lemon or lime juice.
How about possibly adding your vegetables and couscous to a vegetable broth to make roasted vegetable soup !!! Could add a little cream to thicken, or mix it all in a blender for a creamy soup.
