I must confess that I have never made pancakes from scratch. When using the mix, it's a bit more difficult to err. Here's my procedure:
- Mix according to instructions, whisking only a little. I tend to add more water than is called for.
- Heat butter until the large non-stick pan or dutch oven is suitably covered.
- When butter is a bit bubbly, add the mix in scoops.
- When the pancake bubbles, it's time to flip!
- Cook until done.
- Add more butter for the next batch.
As for heat, I'd say probably medium; I tend to adjust it as I'm cooking.
