Fried Rice

My mouth is on fire, I'm full to the brim, and I feel like passing out. This is the evidence that I have carbed out on uberspicy fried rice. I also found a couple funny Youtube videos on fried rice I'd like to share. So here it is!

1 cup cooked white rice
1 onion, diced
4 cloves garlic, chopped
1 hot pepper, chopped
1 carrot, peeled and small chopped
2 handfuls spinach, chopped
3 eggs
1 package of baked, flavored tofu, small chopped
1 scallion, sliced

low sodium, light soy sauce
sesame oil
canola oil

Feel free to add your own blend of veggies and meat. Just make sure everything is chopped small and roughly the same size.


  • In a wok or large frying pan, saute garlic, onion, hot pepper, and carrot over high heat for 5 minutes, or until onion is translucent.
  • Add eggs, scrambling in the pan, until cooked. It's ok if it cakes a bit onto the veggies. I usually push the veggies to one side to give the egg some room. Alternatively, you can cook the eggs in a separate pan. (But why?)
  • Add tofu and spinach, briefly stir fry.
  • Add rice, using spatula to break apart clumps. Mix with veggies until they are evenly distributed.
  • I kind of like my rice to be a bit toasty, so sometimes I just let it hang out in the pan.
  • Add the amount of seasoning you deem fitting. As you know, I tend to be liberal. Taste as you go. Just don't overdo the soy sauce, for the love of God!
  • Mix in scallion and serve.

Youtube Chefs:
The first one is pretty good. That's for your education. The second one is just funny. There is a point at which you wish he would be quiet, but stick it out: it gets more and more amusing to watch his struggles with the cheap wok he is using. At one point he actually says, "I don't read Asian." What?? "Don't be shy!"
