Stacy told me I should post a recipe so I am going to *try* to try. If I do this wrong, please be lenient.

This is one of my favorite comfort foods. It's kind of homey and frumpy, but I love it anyway. It's sweatpants and dirty hair kind of dish. All measurements are approximate…

Dumpy Broccoli Casserole

Ingredients:
-some fresh broccoli-like enough to fill a 8x8 casserole.
-1 can of cream of mushroom soup
-cheese of your choice, shredded. I typically use a cheddar or jack. enough to cover your broccoli-so maybe the equivalent of one of those bags of pre-shredded cheese.
-crushed up ritz crackers or panko breadcrumbs. (again, enough to sprinkle atop your broccoli creation.)
-some melted butter. maybe half a stick.

Preheat over to 350
-Wash up your broccoli and chop it into reasonably sized pieces. Not too small-more spear like than bite sized nibble.
-Steam that broccoli until it just turns bright green.
-Place broccoli in your casserole pan.
-Dump the can of soup into a mixing bowl and dilute with one can's worth of water. Mix it up!
-Pour soup/water mixture atop your casserole dish of broccoli.
-Cover your broccoli mixture with shredded cheese.
-Top with cracker crumbs or panko.
-Top cracker crumbs/panko with melted butter-so you get that golden toasty action.

Bake for 30-40 minutes..or until your casserole starts to bubble.
Eat on the couch while watching Law and Order reruns.
