This is the vinaigrette we keep in the fridge at all times. I make a fresh batch whenever we run out. My dad made a similar dressing but with his own home-made red wine vinegar. I'm not that awesome.
In your mini-chopper put:
1 shallot
Process until finely chopped.
Add:
1/3 cup red wine vinegar
generous pinch salt
fresh ground pepper
big dollop of Dijon mustard
Process until emulsified and smooth.
Add 2/3 cup extra virgin olive oil. Process until well-blended and smooth. This will keep well for about a week in the fridge.
