By having a bag of roma tomatoes, a few limes, a bunch of cilantro, a red onion, and a green pepper in the fridge, I've been able to make fresh salsa throughout the week.
I throw a bit of each in the food processor in various proportions. It's hard to go wrong. It makes a big difference when eating the rice and beans, and I've been mixing any leftover salsa with what remains of the rice for the next day.
Shopping List
- 5-7 tomatoes
- 1 bunch cilantro
- 1 red onion
- 1 green pepper
- 2 limes
- 2 serrano peppers
