Peaunt Noodle Tempeh

I'm working on Amanda's peanut noodle tempeh! Although she says she's been making it as an easy and simple meal, any time I have to take out the cutting board, chop half a head of cilantro, and julienne carrots, my feeling is, it's not an easy and simple meal.

Therefore, I decided if I'm going to do it, I might as well take it up a notch. Laying aside the bottled peanut sauce for the present, I found a recipe of homemade Indonesian styled peanut sauce from Madhur Jaffrey's World Vegetarian. It's a mix of fresh peanuts, lemon, shallots, and garlic. I of course added a minced serrano pepper and upped the sugar content. It's currently boiling away in my pot.
