Watery Hummus

Interesting fact: I eat from my vat of homemade hummus for 2 weeks. That seems like a long time, but nothing bad has ever come of it.

What I have noticed, however, is that within a few days, the hummus becomes much denser. To offset this, I have taken to making the hummus a little more watery than one would normally want. As a result, its creaminess lasts for the duration of its fridge life - in my case (gulp), 2 weeks.
