Parmesan Polenta
Ingredients
  • 1 cup of course cornmeal
  • 4 cups water
  • 1 Tbs butter
  • 1/4 cup Parmesan cheese
  • Salt to taste
  1. Bring salted water to a rolling boil.
  2. Slowly add the cornmeal in a thin stream while whisking constantly. Turn down the heat—the water should be at a near boil at all times.
  3. Once all of the cornmeal has been added, keep stirring until the whisk becomes difficult to use. Then turn to very low heat and switch to a wooden spoon.
  4. After about 5-10 minutes, you can stir slightly less often: every few minutes as opposed to constantly. You can add a little bit of water as you go.
  5. 30 minutes later…
  6. Add the butter, Parmesan, and salt to taste.
