Spicy Roast Chicken With Tomatoes And Marjoram

Ridiculously easy!

You get juicy, fragrant chicken and sweet, jam-like tomatoes on one baking sheet. Add a salad or other green vegetable and there's dinner.

My notes:

  • while fat chicken breasts are delicious, try to get medium-sized ones. The giant ones will still need cooking when the tomatoes are starting to burn.
  • if you can't find fresh marjoram (I couldn't for the longest time) use 1 1/2-2 tbs dried. It's fine.
  • also, I slit a small pocket along the back of the breasts and stuffed some of the garlicky, herbed olive oil in there as well and that made the chicken more flavorful.
