Spinach Pasta

I was checking out the different pasta's in the Pastene section at Stop and Shop and came across their Spinach Egg Noodles, that's what my Mom always called them. Pastene calls them Tagliatelle Verdi 80. Makes a great side dish. I broiled chicken breasts with a Parmesan bread crumb. Topped my spinach pasta with the chicken. Easy, fast and delicious.


1 bag (1lb) of Spinach Egg Noodles
Lots and Lots of of crushed garlic
Extra virgin olive oil about 1/3 cup
Fresh Parmigiano, Parmigiano Romano or Parmigiano Reggiano
Salt and Pepper to taste

Cook pasta according to directions. Meanwhile simmer crushed garlic in olive oil until fragrant. Drain pasta and return to pan. Stir pasta as you add olive oil, garlic, salt and pepper, and freshly grated cheese. Be generous with the cheese and salt and pepper. Serves four people or two with delicious left overs.
