Stewed Green Beans

These beans are good as a side for any sort of chicken or fish, and can also be eaten as a vegetarian meal when sprinkled with feta cheese and served with a crusty loaf of bread.

Ingredients:
1 lb green beans, stems removed
3 cloves garlic, chopped
1 onion, chopped
1 small russet potato, cubed
1 large can chopped tomatoes

Directions: saute garlic and onion until translucent, add beans, potatoes and tomatoes and cook until vegetables are tender, about 30-45 mins.

You want the green beans to get nice and soft herenot exactly mushy, but without any "crunch".
