Tempeh Curry

Delicious and so simple and cheap! These are important adjectives these days.

This tempeh curry is another winner from Heidi Swanson at 101 Cookbooks. The curry sauce itself could be used to dunk other proteins (meat if needed) but the tempeh and potato combo is great.

Do note that you will eat POTATOES with this dish; accept it. And no need for rice; this truly is a one-pot meal.

Note: she says that you don't have to puree the sauce. I did and it was fabulous; I highly recommend you see to it. My hand blender is broken so I just used the blender.
