Zucchini in Tomato Sauce

I have been making this for years. I learned it from my Mom. Easy, healthy and delicious. Great side but once you load it up with fresh parmesan cheese, some nice crusty bread to dip with, you have made it a meal.

In a medium size saucepan add your favorite tomato sauce or canned stewed tomatoes. Season with salt, pepper, and garlic. You can use any spices you like. Cut Zucchini in 1/4 inch slices and add to sauce. If the zucchini is really large I will cut the pieces in half, sometimes in fourths. I don't like to use zucchinis that are too large, I find the seeds end up being rather large also. Simmer on Low for about twenty minutes. Add some extra virgin olive oil at the end and top with lots of fresh parmesan cheese. I serve it in big bowls and use big spoons.
